Tuscan White Bean Salad with Tuna
1-16 ounce can white beans, any variety, drained well
¼ cup finely chopped onion, any variety
1-6 ounce can tuna packed in water, drained well
½ – 1 cup chopped fresh parsley
1-2 Tbls olive oil – or to taste
Salt and pepper to taste
1.Rinse drained beans gradually under warm water
2.Place drained tuna in a bowl, break into chunks, stirring in just a little olive oil for flavor
3.Combine tuna, beans, onion, parsley in a bowl, adding olive oil and mixing well (don’t be afraid to crush some of the beans)
4.Salt and pepper to taste (see notes below)
•This salad benefits from liberal amount of freshly ground black pepper
•Salt enhances the flavor of the oil, but there is salt in the tuna, so be cautious
•Vary the amounts of the ingredients to suit your taste
•Can be served on toasted baguette slices, or stuffed into Pita bread with lettuce and tomato.
Healthy Seeds: Flax, Pumpkin, Sesame, and Sunflower

Flax seeds: contain high levels of dietary fiber as well as an abundance of omega 3 fatty acids. Flax seeds may lower cholesterol levels, and may benefit individuals with certain types of breast and prostate cancers (Roy, et al. 2007). Flaxseeds must be ground in order to receive their full nutritional benefit. Flaxseed oil is widely available as a nutritional supplement.
Pumpkin seeds: are good sources of protein, as well as several minerals including: iron, zinc, manganese, magnesium, phosphorus, copper, and potassium. Pumpkin seeds may help those suffering from prostate ailments (Gossell-Williams, et al. 2006), and help regulate cholesterol levels in the body.
Sesame seeds: are a good source of iron, magnesium, manganese, copper, and calcium, vitamin B1 (thiamine), and vitamin E. Sesame seeds also contain phyto-estrogens that have antioxidant properties and may fight cancer (Ingram et al. 1997).
Sunflower seeds: are a great source of dietary fiber, Vitamin E, Vitamin B1, Vitamin B5, and minerals including copper, manganese, potassium, magnesium, iron, phosphorus, selenium, calcium, and zinc. Additionally, like many types of seeds, sunflower seeds are rich in phytosterols, which may help prevent stomach cancer (De Stefani, et al. 2000).
