why is L-Tryptophan bitter?
couldn’t find anything on the internet on this.. I opened an L-Tryptophan capsule and took a taste of the powder in it. it tastes almost as bitter as xanax, which in many peoples opinion is one of the worst pharmaceutical drugs (especially when abused). i’m trying to see if there’s a connection, if bitter taste is a form of self preservation.. hence my question, just trying to figure out what is causing the bitter taste, because it doesn’t seem logical that L-Trypt. should be bitter, since it’s an essential amino acid not produced in the body. (according to wikipedia)
My only guess would be that the indole functional group, which is present in both stereoisomers, is what causes the bitter flavor. The other stereoisomer of tryptophan, R-tryptophan is often present in venoms, which would explain your self preservation theory.
Since you don’t normally take a.a. as a supplement by itself, the bitter flavor is usually masked by the other flavors in the meat and cheese that supply it.
The indole functional group I mentioned above is also present in many oils that are used in perfumes and extracts that might smell good, but if you have ever tasted perfume or vanilla extract, they are pretty bitter. That is where I got the idea that the indole funcitonal group might be what causes the bitter flavor. By no means am I sure on any of this, all educated speculation.
